I'm Jacqui, the creative force behind this blog, and I'm here to share my passion for creating easy-to-make dishes that are not only gluten-free but also free of refined sugars and mostly dairy-free.
I draw inspiration from wholesome foods and the changing seasons, and offer step-by-step recipes that are designed to be approachable for busy home cooks like you.
A Bit About Me
My love for cooking began in Ottawa, Canada, surrounded by the delicious blend of my Mom's French-Canadian heritage and my Dad's mix of Croatian and Italian roots. My mom filled our plates with comforting classics like savory meat pies, creamy yellow split-pea soup, homemade breads and hearty morning buckwheat pancakes with apples. Meanwhile, my dad, influenced by different cooking cultures, introduced me to the world of home-cooked meals made from scratch, like mouthwatering pasta fagioli, rich vegetable soup with white beans, and all kinds of fish like squid, octopus, smelts and lemon garlic salmon.
I'm excited to share gluten-free versions of some of the traditional foods I grew up with, along with many new and fresh ideas I've learned along the way.
I hope I can inspire you to embrace a healthy lifestyle through creative and delicious wholesome foods.
My Personal Transformation
My path to this point has been shaped by my own health journey. Dealing with hypothyroidism, chronic Lyme disease, severe IBS, SIBO and a family history of celiac disease, I experienced firsthand the transformative power of dietary changes.
By eliminating gluten, refined sugar and dairy, I gained remarkable improvements in my health, mental clarity, and vitality. I discovered that feeling great on the inside radiates a glow on the outside. While I primarily follow a plant-based diet, I'm not strictly vegan or vegetarian; I enjoy organic, local, pasture-raised and grass-fed meats along with sustainable wild-caught fish and seafood for their health benefits.

Simple and delicious gluten-free recipes that have been created and tested in my own kitchen and that I hope you'll love as much as my family and friends do! In fact, I regularly whip up gluten-free meals for my four wonderful kids and husband, who aren't exclusively gluten-free.

More About Jacqui & The Blog
I'm a mother of four amazing kids and one of my greatest joys is nourishing my family and friends with satisfying delicious meals. I wanted to have recipes available for my teens to prepare when they're off to college and needing to cook quick and healthful meals and snacks. This has evolved into creating recipes for anyone in need of a little culinary inspiration.
I am a self-taught cook, drawing inspiration from my mom, dad, nonna, and years of experimenting in the kitchen. I am a Certified Holistic Nutritional Consultant from the Institute of Holistic Nutrition and a Certified Culinary Nutrition Expert from the Academy of Culinary Nutrition. I have read and cooked from numerous cookbooks, learned from accomplished chefs, participated in cooking classes in PEI, Boston, and Italy, and devoured countless food documentaries. Years of cooking experience have enriched my culinary skills.
I don't have a cookbook yet but it's definitely something I'm working towards. Exploring the possibility of sharing my recipes in a cookbook is an exciting journey, and I look forward to the day when I can bring the flavors of Eat Fresh Glow to your kitchen shelves.
