I'm Jacqui, a busy mom of four and the creator, recipe developer and photographer behind Eat Fresh Glow. I love food! I love the texture, the aroma and the flavour of a satisfying meal. I also love how I feel after a meal - nourished, satisfied and energized.
As I set off to create and evolve Eat Fresh Glow, my hope is to inspire you to lead a healthier life with wholesome foods that are creative and delicious. My journey to this point has included changing my diet to remove gluten, refined sugar and processed foods to combat persistent health issues from autoimmune and Lyme disease. This change has helped me gain health, clarity and focus, and along the way I discovered that feeling better on the inside made me glow on the outside. I follow mainly a plant-based diet however I'm not vegan or vegetarian. I enjoy meat and the health benefits that go along with eating organic, local, pasture-raised and grass-fed foods.
You won't find gluten or refined sugar in my recipes but you will find delicious and wholesome foods that will keep you feeling fueled and energized. One of my joys in life is to feed my family and friends healthy, satisfying meals made from minimal ingredients and an abundance of flavor. I enjoy providing an experience that is as deeply nourishing as it is generous with flavor and texture.
My recipes are designed to be simple and easy to follow. As a graduate of the Institute of Holistic Nutrition and the Academy of Culinary Nutrition, I try to combine my extensive training in nutrition and health with my real-world practicality of being a very busy mom.
