Ingredients
1cup(93grams)unsweetened shredded coconut
2tablespoonraw honey (use 1 tablespoon if you prefer less sweetness)
1tablespoonmatcha green tea powder
1tablespoonvirgin coconut oil
Instructions
Add shredded coconut, honey, matcha and coconut oil to a food processor. Pulse for 30 seconds to 1 minute, until the ingredients are well combined but still textured. If you don't have a food processor, you can mix the ingredients in a large bowl with a spoon.
1 cup unsweetened shredded coconut, 2 tablespoon raw honey (use 1 tablespoon if you prefer less sweetness), 1 tablespoon matcha green tea powder, 1 tablespoon virgin coconut oil
Carefully remove the mixture and use your hands to roll about a heaping tablespoon of the mixture into 1-inch balls.
Place the energy bites in the fridge to firm up before enjoying.

Notes
Store in an airtight container in the fridge for up to two weeks. The bites hold their shape better when kept chilled due to the coconut oil.
