Dressing:
zestof 1 lemon
2tablespoonsfresh lemon juice
1tablespoonextra virgin olive oil
1garlic cloveminced
¼teaspoonfine sea salt
¼teaspoonblack pepper to tasteoptional
Salad:
1can(14 ounce) fava beans or broad beansrinsed and drained
1can(14 ounce) chickpeasrinsed and drained
½English cucumberdiced
1medium red bell pepperdiced
1small shallotthinly sliced
3green onions or scallionsthinly sliced
½cup(22grams)fresh mint leavesloosely packed, thinly sliced
½ cup(8grams)fresh cilantro or parsleyloosely packed, chopped
1pinchred pepper flakes(optional)
Instructions
In a small bowl, whisk together lemon juice, lemon zest, olive oil, minced garlic, cumin, salt, and pepper until well combined.

In a large bowl, combine the fava beans, chickpeas, cucumber, red bell pepper, green onion, and fresh herbs. Pour the vinaigrette over the salad and gently toss to coat everything evenly. Sprinkle with red pepper flakes if using.
