In a mason jar or bowl add oats, poppy seeds, chia seeds, lemon zest, and sea salt to mason jar and mix.
½ cup rolled oats, 1 teaspoon poppy seeds, 1 teaspoon chia seeds, 1 teaspoon lemon zest, ⅛ teaspoon fine sea salt
Mix in yogurt, dairy-free milk, lemon juice, and maple syrup. Cover and refrigerate for 2 hours or overnight.
⅓ cup almond milk, ¼ cup non-dairy plain yogurt, 1 tablespoon fresh lemon juice, 1 teaspoon pure maple syrup
Before serving, add about a tablespoon or two more non-dairy milk if too thick (optional). Top with extra lemon zest, sliced almonds, seeds or fresh berries.
