Chocolate covered raspberry chia bites are packed with the goodness of chia seeds, fresh raspberries, and melted chocolate. Perfect for any occasion, from Valentine's Day to an easy summer gathering. Both vegan-friendly and gluten-free, these chocolate coated raspberry chia bites will satisfies your sweet tooth without the guilt!
In a small bowl or shallow dish mash raspberries with a fork until they resemble raspberry jam or raspberry pudding.
1¼ cup fresh raspberries
Mix in chia seeds and let the mixture rest for 5-10 minutes to thicken.
1 tablespoon chia seeds
Drop about 8 small rounds of the raspberry chia mixture onto a lined baking sheet (about 1 tablespoon each). Shape into discs. Freeze for 45-60 minutes until set.
When ready, melt chocolate and coconut oil (if using) in microwave safe bowl in 15-second increments until melted. Or use a double boiler or small saucepan over low heat.
1 cup dark chocolate chips, 1 teaspoons coconut oil
Dip frozen raspberry jam bites one at a time in melted chocolate mixture until fully coated, shaking off any excess chocolate. Sprinkle with sea salt (if using) while chocolate is still wet.
1 pinch flaky sea salt
Place back in the freezer for 30 minutes to allow the chocolate coating to harden. Enjoy!

Notes
You may need to gently reheat the chocolate after dipping a few raspberry chia bites since the frozen raspberry will cool the chocolate.
Before eating, allow to soften at room temperature for 1-2 minutes.
Store in an airtight container in the freezer for up to 2 months.
