Cumin Rosted Carrots and Chickpeas

Cumin roasted carrots and chickpeas is easy to prepare, and perfect for a vegetarian meal option or a simple healthy side dish.

sea salt ground cumin cumin seeds turmeric cayenne

olive oil

green onions


sea salt & ground pepper

Slice carrots lengthwise in half or quarters to even thickness.

Place carrots and chickpeas on baking sheet and toss with olive oil and spices. Roast.

Meanwhile prepare vinaigrette.

Drizzle with vinaigrette, tossing gently to coat. Top with green onions (scallions) and parsley.
