Line a 12-cup regular muffin tin with parchment paper liners.

Melt the dark chocolate and coconut oil.

Fill each muffin cup with ½ tablespoon (or slightly more) of melted chocolate. Place in freezer for 10 minutes or until firm.

Place shredded coconut flakes in small food processor and blend until mostly smooth. This makes coconut butter for your filling.

Mix coconut with matcha and peppermint extract. Add into middle of each muffin cup. Flatten with your finger and keep away from the edges.

Add melted chocolate to each muffin cup, covering coconut mixture. Return to freezer for 10 minutes or until firm.
