Whisk until well combined.

Mix until well combined and a dough forms. Let sit for a few minutes for flours to absorb liquids.

Add coconut sugar or monkfruit sweetener to a small bowl for rolling cookie dough.

Roll dough into balls then roll cookie dough balls through sugar.

Gently flatten to about ¼-inch thickness and bake.
