BLUEBERRY BUCKWHEAT MUFFINS

Tender and moist, these easy blueberry buckwheat muffins are healthy, gluten-free, vegan and refined sugar-free.

pure maple syrup

plant-based milk

blueberries

Ingredients you'll need:

buckwheat flour (light or dark)

sea salt

coconut oil

vanilla extract

baking soda

apple cider vinegar

In a large mixing bowl, mix wet ingredients until well blended.

Whisk dry ingredients together. Add dry ingredients to wet ingredients and mix well.

Add some buckwheat flour to the blueberries to prevent them from sinking in muffins.

Gently fold blueberries into muffin batter.

Pour batter into prepared muffin tin and add extra blueberries on top if desired.

Bake the blueberry buckwheat muffins. Let cool in the muffin tin for a few minutes and then carefully transfer to a wire rack.
