Equipment needed: –large bowl, whisk and spatula –¼ cup measure for pouring batter –large skillet – medium saucepan to warm the cinnamon apple maple topping

In a large bowl, whisk together dry ingredients: buckwheat flour, baking powder, cinnamon, nutmeg and sea salt.

Gently mix whisked egg, non-dairy milk, maple syrup and diced apples into the flour mixture, careful not to over mix batter.

Warm coconut oil in skillet on medium-low heat. With a ¼ cup measure, pour batter into pan, spacing the pancakes 2-inches apart.

Cook 2-3 minutes, until bubbles form and bottom is golden. Flip and cook another 1-2 minutes. Continue in batches, adding coconut oil to pan as needed.
