Matcha Green Tea Energy Bites

  • Author: Jacqui
  • Total Time: 10 minutes
  • Yield: 8-10 balls 1x

Experience a boost of natural energy with these 4 ingredient no-bake matcha green tea energy bites. They're loaded with antioxidants making them nourishing and delicious.

  • 1 cup shredded coconut, unsweetened
  • 2 tablespoon raw honey (use 1 tablespoon if you prefer less sweetness)
  • 1 tablespoon matcha green tea powder
  • 1 tablespoon unrefined coconut oil

  1. Add all ingredients to the bowl of a food processor (I use a small processor). You can also use a high powered blender with the tamper tool, or a medium sized bowl and a spatula or wooden spoon.
  2. Pulse for 30 seconds to 1 minute, until the ingredients are combine yet still textured. Or, mix all ingredients in a bowl with a spoon until well blended.
  3. With your hands, roll about a heaping tablespoon of the mixture at a time, and form into balls.

Store the matcha green tea energy bites in the fridge in an airtight container for up to two weeks. They are better in the fridge as the coconut oil will be too soft at room temperature to maintain a firm ball.

You can also freeze the healthy energy balls. Place them on a parchment lined baking sheet and freeze for 1 hour. Transfer the balls to an airtight container and freeze for up to 3 months.
